Shortbread Bars with Jam d’jour

 2 C flour

½ C white sugar

¼ t salt

1 C cold butter

 1 C jam of your choice

½ C sliced almonds

1 C reserved flour crumbs

 

Blend the first four ingredients in a mixer until the butter is in very small crumbs.  Reserve 1 C.  Press the rest into a greased 11x7 inch pan.  Bake at 350 for 30 minutes.

Spread the jam on the warm bars very carefully, sprinkle with reserved cup of flour mixture.  Sprinkle with almonds.  Bake again at 350 for ~40 minutes or until golden brown.  Let cool before cutting to serve.
