1 onion, diced
1 green pepper, diced
1 T oil
4 t chili powder
2 t cumin
4 C diced chicken meat
10 oz can cream of chicken soup
1 can water or more if too thick
1 ½ C frozen corn
30 oz white beans, rinsed and drained
Saute the onion and pepper until tender. Add remaining ingredients, bring to a boil, reduce to a simmer and keep warm until ready to serve. Sprinkle with pepper jack cheese or cheddar if desired. This holds really well in a crock pot. It serves at least 6.
