Zucchini Relish

4 C diced zucchini
1 large onion, quartered and thinly sliced
2 celery stalks, sliced
1 red pepper, sliced
2 medium carrots, quartered and sliced
1 T salt
Enough cold water to cover

¾ C sugar
½ C water
½ C cider vinegar
½ t celery seed
Dash onion salt
Dash ground turmeric

In a large bowl, combine all the vegetables, sprinkle with salt, cover with cold water.  Let stand 3 hours, rinse and drain.  In a large pot, bring the remaining ingredients to a boil.  Stir in the vegetable mixture, return to a boil.  Reduce to a simmer uncovered for 5 min.  Transfer to a bowl, cool to room temp.  Refrigerate for at least 2 days before serving.
