Creamy Chicken Potato Soup

1 onion, diced
2 T oil
6 C chicken broth
2 lbs diced potatoes
3 C cubed chicken or turkey
1 t salt
½ t pepper

¼ C flour
2 C low fat milk
fresh parsley and chives

Saute the onion in the oil until tender.  Add the broth and potatoes and cook until tender. 
Add the chicken and seasonings.  Mix together the flour and milk until very smooth.  Add
to the soup, bring to a boil, reduce to simmer and cook until thickened.  Sprinkle each
bowl with parsley and chives if desired.
