Pasta Fagioli Soup

½ lb Italian sausage, diced or crumbled
½ C diced onion
 1 ½ t olive oil
 4 C chicken broth
 15 oz white beans, rinsed and drained
 15 oz diced or crushed tomatoes
 ¼ t minced garlic
 ¾ C uncooked macaroni or small shell pasta
 1 C fresh spinach leaves, diced
 
Saute sausage and onions until tender. Add the next 4 ingredients, bring to a boil. Add pasta and cook until tender. Stir in the spinach just before serving so it stays green. Sprinkle with Parmesan if desired. Should serve 5.
