~4 C shredded carrots
1/2 cup chopped fresh cilantro
1/4 cup finely chopped onion, sauted first if you wish
1 firm-ripe California avocado
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 small garlic clove, finely chopped
3/4 teaspoon salt
1/4 teaspoon black pepper
Whisk the dressing ingredients together and toss with the salad. Chill until ready to serve.
