1 onion, diced
1 red bell pepper, diced
1 lb hot ground pork sausage
½ t minced garlic
½ C dry white wine
8 oz cream cheese
6 oz fresh spinach, chopped
¼ t salt
15 oz pinto beans, drained and rinsed
½ C Parmesan
Saute onions, pepper, and sausage until tender and done. Drain well.
Add wine and garlic to sausage, boil until liquid is almost gone.
Stir chunks of cream cheese into skillet, stir until blended.
Add remaining ingredients to skillet, mix well, pour into crock pot or serving dish.
Heat through. Great with chips.
