3 C ¾ inch cubed sweet potatoes (1 ½ lb)
1 C chopped red onion
2 T olive oil
1 t seasoned pepper
6 bacon sliced, cooked and diced (optional)
¼ C chopped fresh parsley
2 C (8 oz) shredded Swiss cheese
1 ½ C half and half
1 t chopped fresh rosemary
½ t salt
1 pie crust (also optional)
Toss the first 4 ingredients together, spread on baking sheet in single layer and bake at 425 until potatoes are tender, ~ 20 min. Cool, toss in bowl with bacon, parsley, and cheese. Pour into greased pie pan (with or without crust). Mix eggs and cream thoroughly, pour over filling. Bake at 350 for 40-60 minutes or until set. Should pass clean knife test.
