December 27, 2010

1 ¼ C sugar

½ C water

12 oz frozen cranberries

2 tart apples, peeled and finely chopped

1 medium onion, diced

½ C golden raisins

½ C brown sugar

¼ C cider vinegar

1 t cinnamon

½ t salt

1/8 t allspice

1/8 t cloves

½ C chopped walnuts, toasted

Bring sugar and water to a boil in a saucepan.  Reduce to simmer and cook uncovered for 3 minutes.  Stir in remaining ingredients except walnuts.  Return to a boil, reduce to a simmer and cook uncovered for 25 minutes or until it’s reached the desired thickness.  Stir occasionally.  Just before serving, stir in the walnuts.  Serve warm or cold.

‘Thank you’ just seems so inadequate…It was honestly one of the best vacations I can remember.

We loved Latigo Ranch! It was our best vacation ever! Cabins were comfortable, food was scrumptious and the wranglers were wonderful.
