Our guests often ask for recipes from the Latigo Ranch kitchen.  We plan to post a new recipe here regularly. 

Lisa searches for recipe ideas and often finds new recipes to try, and if we like them, Randy experiments to figure out how to make them work when preparing them for 30+ guests.  Sometimes what we end up with is quite different from the original  and other times we make little change.  

Since most of you don't live at 9,000 ft. above sea level like we do, we have adjusted the recipes for baked goods for low altitude.  If you do need to correct for higher altitudes, please feel free to email us for suggestions.

I’ve tried a number of Paleo breads and have found most of them unappealing and unremarkable.  This new recipe caught my eye, and I gave it a go.  The texture is good; it feels more like bread than baked eggs.  The sweet potato adds nutrients and a bit of color, but I doubt you could identify it as an ingredient in a blind taste test.  I baked an orange sweet potato instead of boiling it because I wanted to minimize the moisture content.  I’ll certainly make this one again! This wonderful Paleo-friendly brownie recipe was even a hit with non-Paleo people this holiday season, and that’s a pretty good recommendation.  Great flavor, great texture, and therefore a great way to satisfy a chocolate craving.  The recipe originally was found on www.everydaymaven.com, and I had to make no adjustments for altitude.  I did switch out the unsweetened baking chocolate for dark chocolate chips as we think the taste is so much better.

These Paleo pancakes have a pleasant texture and great flavor.  I’ve found that one batch is good for about 3 meals; they warm up nicely in the toaster oven or microwave and make a lovely vehicle for almond butter.  Mashed sweet potato gives a neutral flavor, extra beta carotene, and offers a colorful presentation.  I’m sure pumpkin puree would substitute as well.

I found the basics for this recipe on Pinterest from the site, www.veganricha.com .  I modified it a tad to fit the ingredients I had and the process that worked for me.  It was hugely successful for the vegan and the paleo person at our table.  It seemed like a lot of work to make it, but next time I won’t wash the food processor between the first and second layer.  I’ll also make them in bar form because cutting and serving them like a small piece of fudge would be much more desirable than having a slice of pie for dessert.
