Our guests often ask for recipes from the Latigo Ranch kitchen.  We plan to post a new recipe here regularly. 

Lisa searches for recipe ideas and often finds new recipes to try, and if we like them, Randy experiments to figure out how to make them work when preparing them for 30+ guests.  Sometimes what we end up with is quite different from the original  and other times we make little change.  

Since most of you don't live at 9,000 ft. above sea level like we do, we have adjusted the recipes for baked goods for low altitude.  If you do need to correct for higher altitudes, please feel free to email us for suggestions.

Although this recipe was posted a few years ago, I thought Hannah’s beautiful photo warranted a re-run of our favorite holiday treat.  This recipe came from my mother’s sorority house at Michigan State many, many years ago, and it’s a tradition in our family at Christmas.  I find that it’s very helpful to have two people involved to aid in the placement of the red hots that serve as holly berries.  The person who scoops the holly ‘leaves’ onto the parchment ends up with green sticky fingers, and the procedure is rather time sensitive.

You know you’ve found a great gluten free cookie recipe when everyone wants to eat them!  This makes a big batch, and because I only needed a few for lunch, I scooped the remaining dough, froze the balls, and repackaged them in a bag.  I pulled a few out for lunch again today, and the good news is they are still as good being baked from frozen as they are right out of the mixing bowl.  You need to plan ahead a bit as the browning of the butter takes some time, but I have a feeling that step is what makes the end result so tasty. These delicious cookies have been a favorite for years, but they seem to be enjoying a resurgence this summer with many new fans.  Traditionally, I’ve just used a small smear of frosting and then sprinkled some chopped pecans on top.  This summer, the frosting jobs have fallen to our waitstaff, and since they are huge fans of anything sweet, the small dollop of frosting is a thing of the past.
