Dining in the Mountains

The Latigo Dinner Club has only just concluded its second season of success. However, there has already been significant interest in booking them up next winter, and, honestly, we can’t blame the diners for wanting more of the best food in the Rockies.

The March 9th Dinner was a classy affair with shining silver, twinkling lights, and navy napkins folded to a crisp point. To open the palate, Hannah, Amanda, and Jon served an Amuse Bouche of duck confit served with house-made raspberry, shallot jam.

The rest of the evening followed in decadent delights with sparkling prosecco paired with a beef or more unique zucchini carpaccio, drizzled with an inspired brown-butter vinaigrette, braised pork belly garnished with pickled purple cabbage, and followed by a choice of ribeye fillet or scallops.

Whichever your choice, the plate was filled with sumptuous asparagus, which had been cooked to a tender perfection, and a sweet potato puree of surprising complexity.

Did dinner end there? Oh, no. Not by a long shot.

The third course was followed by the palate cleanser and dessert, but I can’t go giving away all of the Dinner Club secrets, now. Can I?
