GF Double Corn Cornbread

 1 C GF all purpose flour

1 C cornmeal

1 T baking powder

1 t baking soda

1 t salt

 ¼ C sugar, PureVia, or agave

2 eggs, beaten

1 C rice milk or regular milk

¼ C canola oil

1 T cider vinegar

1 C corn

Stir together the dry ingredients and add the liquid.  Stir until just incorporated. 

Makes 1 loaf or 12 muffins.  Muffins are easier, and they hold together better than trying to cut slices of the loaf.  Bake at 350 until they pass a toothpick test.
