4 medium baking apples, peeled and diced
1 C water
½ C brown sugar
1 T lemon juice
¼ t cinnamon
1 T cornstarch, mixed with a bit of the apple water
1 C GF all purpose flour
¼ t baking powder and baking soda
½ t ginger
¼ t salt
¼ C sugar
2 T buttermilk powder + ½ C water
¼ C egg beaters
¼ C molasses
2 T canola oil
In a saucepan, combine the apples, water, sugar, cinnamon, and lemon juice. Bring to a boil. Reduce to simmer, cover and cook 10 minutes. Add the cornstarch and water to the apples, stir well, pour into a greased 8 inch baking dish.
Mix the dry ingredients and add the liquids. Stir well and pour over the apples in the baking dish. Don’t stir. Bake at 350 for 45 minutes. It should pass a toothpick test.
Best served warm with vanilla ice cream!
